Zucchini Noodles with Garlic Shrimp
Zucchini Noodles with Garlic Shrimp Zucchini Noodles with Garlic Shrimp
Zucchini noodles with garlic shrimp; and easy, healthy, low carb, gluten free meal that only takes 20 minutes.
SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: 6 Minutes
Ingredients

2 Pkg. Zucchini Veggie Spaghetti
1 lb. Shrimp, peeled and deveined
2 cloves garlic, minced
1 tsp. paprika
the juice of 1 lemon
2 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. fresh parsley finely chopped

Directions
Step 1  Step 1:
Place zucchini spaghetti in a colander over a bowl or in the sink.
 
Step 2  Step 2:
Sprinkle zucchini with salt and toss to combine. Let the zucchini sit for 15 minutes while the salt extracts the moisture.
 
Step 3  Step 3:
Meanwhile, combine the garlic, paprika, lemon juice, and shrimp in a bowl and mix well.
 
Step 4  Step 4:
Heat the olive oil in a large skillet over medium high heat. When the pan is hot, add the shrimp and season with salt and pepper. Saute until the shrimp changes color.
 
Step 5  Step 5:
Rinse the zucchini under running water to remove the salt and then dry on paper towels.
 
Step 6  Step 6:
Add the zucchini noodles and parsley to the garlic shrimp, toss to coat and serve.
